What questions should a customer ask before hiring a professional in your trade?

If they don't show up in google then be VERY AWARE. A trade license isnt' important because anyone can pay for that paper and I seen it many times. Just make sure you google them, check references, and if possible stop by previous work if you are close and if its a big job. no reason to if its something like drywall repair, thats worse can happen is look bad.
